Recipe: Salad Tofu With Almond Sauce And Hemp Seeds

Ingredients

 65g of tofu

 150g of zucchini

 25g of mass underneath

 1 teaspoon soy sauce

 Half a spoonful of dehydrated chili powder

 1 tablespoon of olive oil

 1⁄4 curly lettuce

 1 handful of chopped fresh coriander

 1 tablespoon Iswari hemp seeds

 25g sprouted peas

 1/4 small purple onion

 Salt

INGREDIENTS - FOR THE ALMOND SAUCE

 15ml Iswari almond butter

 1 teaspoon soy sauce

 1 teaspoon fresh ginger, grated

 Lemon juice

 1 tablespoon of water


Method

  1.  Preheat the oven to 200°C.
  2.  Cut the tofu into small cubes and place on a tray to be baked with the oil, chili pepper and soy sauce. Wrap it well, spread the cubes on the tray and bake in the oven for about 20 minutes or until golden.
  3.  Mix the ingredients for the sauce in a bowl.
  4.  Add water to taste to make it creamier.
  5.  Cook the pasta under boiling water for 10 minutes. Drain the water and let it cool.
  6.  Turn the zucchini into a spiral shape and place it in a bowl with the pasta underneath, chopped fresh coriander, onion cut into thin half-moons, sprouted peas and julienned curly lettuce.
  7.  Sprinkle the crunchy tofu, creamy almond sauce and hemp seeds and serve immediately.
