The cashew nut is a seed of the fruit of the cashew tree (Anacardium occidentale). This seed is rich in minerals (such as iron, phosphorus, selenium, zinc and magnesium) and monounsaturated fats. The vitamin C content of the cashew nut is - on average - 3 to 4 times higher than that of the orange, which gives the fruit an antioxidant capacity. It has a high caloric value and should therefore be included in the diet in moderation.
