Chunky Monkey Protein Pancakes

These protein pancakes will give a great start to your day. You don't know what to do for breakfast today? Feel like something different after your daily indoor rowing or jogging workout?

These protein pancakes will become the super nutritious and delicious pre or post workout breakfast. They will provide constant energy and a feeling of satiety over a long period of time. And you know what? If there are any pancakes left over, you can freeze them. If your meal plan allows, you can also add some red fruits for an extra dose of antioxidants. You can also use frozen bananas for the recipe.

These pancakes are easy to make and do not require many ingredients or kitchen utensils. Plus, they are a good way to introduce more protein into your diet.

For: 8 pancakes


1 cup whole grain oatmeal

1 measure (30gr) of SUPER VEGAN PROTEIN Banana and Vanilla with DigeZyme complex

2 teaspoons of yeast

1 tablespoon ground flax seeds

1 cup of sugar-free oat drink

1 mashed banana (+/- 100gr)

1 handful of coarsely chopped nuts

1 handful of chocolate 85% coarsely chopped


1. Put the oat flour, protein, yeast and flaxseed in a bowl and mix with a whisk.

2. Mash the banana and mix it with the oat drink, stirring well with the whisk until the banana and drink form a uniform liquid.

3. Add the dry ingredient mixture to the drink and stir well until it becomes a homogeneous mass.

4. Add the chopped nuts and chocolate and mix again so that all the pieces are evenly distributed.

5. Place a non-stick pan on the heat and add a teaspoon of coconut oil.

6. As soon as the pan is hot, reduce the heat to medium and, using a ladle, pour in some of the pancake batter. Cook for about one minute, or until you can turn the pancakes over with a spatula.

7. Bake on the other side for another 1 to 2 minutes. Repeat the process until you have used all the batter.
