Recipe: Croquette Of Seeds And Spinach With Apple Salad And Cashew Mayonnaise -

Ingredients

CROQUETTE INGREDIENTS 

200g cooked chickpeas 

60g almond 

1 tablespoon Iswari almond butter 

1 tablespoon lemon juice 

2 tablespoon chopped fresh spinach  

1 teaspoon paprika powder 

Grated bread 

Olive oil 


SALAD INGREDIENTS 

2 apples 

1 onion 

1 small salad 

2 handfuls of lamb's lettuce 


INGREDIENTS FOR MAYONNAISE 

150g cashew nuts soaked for at least 4 hours 

1 tablespoon white wine vinegar 


Method

1. Mix all ingredients except breadcrumbs until they form a paste. 

2. Pour into a bowl and add the breadcrumbs until you can form balls of dough.  

3. Heat a little olive oil in a frying pan, add the balls and cook until golden. 

4. You can also put them on a baking sheet lined with baking paper, sprinkle them with olive oil and cook them for 20 minutes on the grill position. 

5. In the meantime, put the chopped onion in a salad bowl. 

6. Add the coarsely chopped lettuce and lamb's lettuce. 

7. Finally, add the pitted and diced apple.  

8. Mix everything together. 

9. Mix all sauce ingredients and pour into a bowl. 

10. Adjust the texture according to whether you prefer thicker or more liquid.

11. Serve the  hot croquettes with the salad and cashew mayonnaise.
