Recipe: Maca Vanilla Chocolate Chip Cookies (no-bake)

Ingredients

3⁄4 cup cashew butter

1⁄2 cup maple syrup

1 tsp vanilla bean paste

3 cups Iswari Buddha’s Awakening Maca & Vanilla

1 tsp salt

1⁄2 cup vegan-friendly chocolate chips


Method

1. Add the wet ingredients (cashew butter, maple syrup and vanilla bean paste) to a

bowl and whisk until smooth. Set aside.

2. In a separate large bowl combine the dry ingredients (Buddha’s awakening maca

& vanilla, salt).

3. Add the wet mix to the dry ingredients and mix using a spatula. Once the mixture

comes together start kneading it with your hand to form a dough.

4. Add the chocolate chips and continue to knead until everything is mixed evenly.

5. Cover the dough with plastic and freeze for half and hour.

6. Line a baking sheet with parchment paper and use and ice-cream scoop to

measure out the cookies.

7. Flatten each cookie with a fork by creating a criss-cross pattern.

8. Place the cookies in the freezer to set for one hour.


These cookies store well in an airtight container in your refrigerator or freezer.
