Recipe: Blueberry & Lemon Chia Jars

Ingredients

BLUEBERRY JAM

1 1⁄2 cups frozen wild blueberries

1⁄2 cup water

2 tbsp Iswari chia seeds

1 tbsp agave syrup


LEMON CHIA PUDDING

5 tbsp Iswari chia seeds

Juice of 1 lemon

Zest of 1 lemon

1 cup almond milk

1 tbsp agave syrup

1⁄4 tsp ground turmeric


MANGO NICECREAM

2 cups frozen mango

Juice of 1⁄2 lemon

3⁄4 cup almond milk

1 cup soya or coconut yoghurt, for garnish

Frozen mango chunks, for garnish

Fresh blueberries, for garnish,

Freeze dried raspberries, for garnish


Method

  1. To make the jam, add the blueberries, water, chia seeds and agave syrup to a saucepan and bring to a simmer.
  2. Allow to cook for 5-10 minutes, stirring occasionally.
  3. Remove from the heat and allow to cool for 30 minutes.
  4. For the chia pudding, add all of the ingredients to a bowl and this well.
  5. Allow the mixture to sit for 1 hour, whisking occasionally.
  6. To assemble the jars, add some frozen mango chunks to the bottom of the jar.
  7. Top with the chia pudding, followed by the yoghurt and blueberry jam.
  8. Add the mango nice cream on top and garnish with fresh blueberries and freeze dried raspberries.
  9. Meanwhile, prepare the mango nice cream by adding all of the ingredients to a high speed blender.
  10. Blitz until smooth, and transfer the nice cream into a container and freeze until ready to serve.
