Cashew nuts

The cashew nut is a seed of the fruit of the cashew tree (Anacardium occidentale). This seed is rich in minerals (such as iron, phosphorus, selenium, zinc and magnesium) and monounsaturated fats. The vitamin C content of the cashew nut is - on average - 3 to 4 times higher than that of the orange, which gives the fruit an antioxidant capacity. It has a high caloric value and should therefore be included in the diet in moderation. Cashew nuts can be included in snacks with foods such as fruit and yoghurt and can be added to salads and recipes such as cakes, breads, biscuits, among others.
