Chia Seed Pudding with Apple Puree

I’ve never been a big fan of chia seed pudding, but it all changed a few weeks ago, when I decided to give these seeds a second chance and combine them with apple puree. Only then I realized why so many people love this healthy pudding. It’s light, it’s satiating and it has a very pleasant consistency. It’s great at any time of the day, good for breakfast, for a snack or even as a dessert!

The recipe that I propose is the one I like to enjoy before training. I usually add some protein – Iswari’s Super Green Protein. This mixture, in addition to the beautiful colour that gives to the pudding, is a real protein bomb, rich in nutrients and minerals. It is a pure protein and, to be clear, it does not contain artificial colours or flavours (so it does not taste like chocolate or brownies). It is a blend of three vegetable proteins (hemp, rice and peas), matcha, spirulina and chlorella.

Ingredients:

3.5 tablespoons of Chia seeds

1 cup (250 ml) of vegetable drink

1/3 cup of apple puree

½ tablespoon of Iswari’s Super Green Protein

Shavings of lemon peel

Cinnamon

Vanilla extract (optional)

Preparation:

1 – Put the chia seeds and the vegetable drink in a glass jar with lid. Close it and shake it very well until the chia seeds are mixed with the drink.

2 – Store in the refrigerator overnight (to rehydrate the chia seeds).

3 – In the morning, add the remaining ingredients, mix well and… voilá! Breakfast is ready to be eaten.

As a topping, in this case, I added grated coconut, shavings of lemon peel and Iswari’s raw chocolate: a perfect combination.
